Ingredients
- 2 to 3 lb. yellow squash, sliced
- salt to taste
- 1 pt. cottage cheese (small curd, cream-style)
- 2 eggs, slightly beaten
- 1 stick oleo, melted
- 1/2 lb. grated Cheddar
- 2 c. dry bread crumbs
- 1/2 c. grated Parmesan cheese
- 1/2 stick oleo, melted
Directions

1Cook squash in boiling water until tender.

2Drain.

3Add salt and set aside.

4Mix cottage cheese, eggs, 1 stick melted oleo and grated cheese; mix well.

5Mix with squash.

6Pour into greased baking pan.

7Sprinkle with bread crumbs and Parmesan cheese.

8Pour 1/2 stick melted oleo over top.

9Bake at 400° for 40 minutes or until very hot and bubbly throughout.

10Serves 8 to 10.
