Squash Casserole

Ingredients

  • 2 to 3 lb. yellow squash, sliced
  • salt to taste
  • 1 pt. cottage cheese (small curd, cream-style)
  • 2 eggs, slightly beaten
  • 1 stick oleo, melted
  • 1/2 lb. grated Cheddar
  • 2 c. dry bread crumbs
  • 1/2 c. grated Parmesan cheese
  • 1/2 stick oleo, melted

Directions

    Cook squash in boiling water until tender.

    Drain.

    Add salt and set aside.

    Mix cottage cheese, eggs, 1 stick melted oleo and grated cheese; mix well.

    Mix with squash.

    Pour into greased baking pan.

    Sprinkle with bread crumbs and Parmesan cheese.

    Pour 1/2 stick melted oleo over top.

    Bake at 400° for 40 minutes or until very hot and bubbly throughout.
