Squash Casserole

Ingredients

  • 5 zucchini
  • 5 yellow squash
  • 1 medium onion
  • 1 medium green pepper
  • leaves of 4 celery stalks
  • 6 Tbsp. margarine
  • 1 egg, beaten
  • 1 1/4 c. Cheddar cheese, grated
  • 1/3 c. cracker crumbs
  • seasoned salt

Directions

    Slice and boil squash until soft.

    Brown onion, pepper and celery in 2 tablespoons of margarine.
  3. 3
    Drain squash and mash with browned mixture.
  4. 4
    Add 4 tablespoons margarine, 1/2 cup cheese, cracker crumbs and seasoned salt to taste.

    Add beaten egg and cover with remaining cheese.

    Bake at 375° for 45 minutes in a 12 x 8 x 1-inch pan sprayed with nonstick spray.
