- 1 onion, diced
- 3/4 stick margarine
- 2 eggs, beaten
- 30 Ritz crackers, crumbled
- 2/3 c. evaporated milk
- 2 c. grated Cheddar cheese
- salt and pepper
Directions

1Boil squash for 5 minutes in small amount of water.

2Drain well.

3Mix all ingredients.

4Pour into 2-quart greased baking dish.

5Bake at 375° for 1 hour.
