Squash Casserole

Ingredients

  • 2 lb. yellow squash
  • 1/2 c. chopped onion
  • 1 c. cream of chicken soup
  • 1 c. sour cream
  • 1 c. shredded carrots
  • 1 (8 oz.) pkg. stuffing mix
  • 1/2 c. margarine

Directions

    Cook onion and squash 3 minutes in microwave.

    Stir, cook another 2 minutes, drain.

    Combine soup, sour cream and carrots. Spread 1/2 of dry stuffing mix in bottom of dish.

    Add squash/onion to soup mixture.

    Put in dish.

    Top with rest of stuffing mix.

    Drizzle melted butter on top.

    Bake at 350° for 25 to 30 minutes.
