- 2 lb. yellow squash (3 c. mashed)
- 1 c. sour cream
- 2 carrots, grated
- 1 onion, chopped
- 1 can cream of mushroom soup
- salt and pepper to taste
- vegetable cooking spray
- 2 c. crushed Ritz crackers, divided
- 1 Tbsp. margarine
Directions

1Slice squash; cook in water over medium-high heat until tender; drain and mash.

2In large bowl, combine squash, sour cream, carrots, onion, soup, salt and pepper; mix thoroughly. Spray a 3-quart casserole dish with vegetable spray.

3Sprinkle 1 cup of crackers on bottom of casserole dish.

4Pour squash mixture over crackers; top with remaining cup of crackers.

5Dot with margarine.

6Bake at 350° for 40 minutes.
