- 2 to 3 lb. yellow squash
- 1 c. grated Cheddar cheese
- 1/4 c. butter
- 1 medium onion, finely chopped
- 1/2 c. sour cream
- 15 to 20 c. Ritz crackers
Directions

1Cook squash with onion until tender.

2Drain well.

3Salt and pepper to taste.

4Mix 1/4 cup Cheddar and sour cream.

5Pour into casserole.

6Top with crumbled Ritz crackers mixed with 3/4 cup cheese.

7Dot with butter.

8Bake at 375° until brown, 20 to 25 minutes.
