- 2 lbs yellow squash
- 1 medium onion, chopped
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1/2 cup butter
- 1 1/2 cups cheddar cheese, shredded
- 1 egg
- 1/2 cup Ritz cracker, crushed

Directions

1Cut squash into small pieces and cook until tender.

2Add chopped onion to squash. Then add salt, pepper, 1 stick butter and cheese.

3Beat the egg and add to squash mixture.

4Pour into casserole dish.

5Crush crackers and put on top of casserole. Dot with butter.

6Bake at 350°F until top is brown, about 45 minutes.
