Squash Casserole

  • 4 medium squash
  • salt and pepper to taste
  • 3 Tbsp. butter
  • 1 medium onion
  • 1/2 c. cheese
  • 1/2 c. butter
  • 1 pkg. Ritz crackers, crushed

Directions

    Cut squash in medium pieces.

    Chop onion; mix with 3 tablespoons butter.

    Put in casserole dish.

    Cover tight.

    Cook in oven about 30 minutes until squash is tender at 350°.

    Take out and put cheese on top; let melt.

    Mix 1/2 cup melted butter with cracker crumbs.

    Place on top.

    Cover with foil.

    Cook 15 minutes.
