Squash Casserole

Ingredients

  • 2 1/2 lb. fresh or frozen squash
  • 1 chopped onion
  • 8 oz. grated sharp Cheddar cheese
  • 2 Wyler's beef cubes, dissolved in 2 Tbsp. hot water
  • 3 eggs, beaten slightly
  • 2 Tbsp. margarine
  • 1/4 c. milk
  • 1 roll pkg. Ritz crackers, crushed finely
  • dash of black pepper

Directions

    Spray a 9 x 14-inch baking dish with Pam.

    Cook squash and onion until tender; drain well.

    Mash with potato masher.

    Add all other ingredients.

    Sprinkle small amount of grated cheese over top.

    Bake at 350° in oven for 40 to 45 minutes.
