Squash Casserole

Ingredients

  • 2 c. squash, cooked until tender
  • 2 oz. pimiento
  • 2 carrots, grated
  • 1 small onion, finely chopped
  • 1 can cream of celery or chicken soup
  • 1 c. sour cream
  • 1 small pkg. herb seasoned stuffing mix
  • 1/2 stick margarine

Directions

    Cut squash into cubes.

    Cook in salted water until firm and tender.

    Drain.

    Do not mash.

    Melt margarine and mix with stuffing mix.

    Mix remaining ingredients, folding in squash last. Put half of stuffing in bottom of casserole.

    Add squash mixture.

    Top with remaining stuffing.

    Cook in a 350° oven until bubbly, about 1/2 hour.
