- 2 c. squash, cooked until tender
- 2 oz. pimiento
- 2 carrots, grated
- 1 small onion, finely chopped
- 1 can cream of celery or chicken soup
- 1 c. sour cream
- 1 small pkg. herb seasoned stuffing mix
- 1/2 stick margarine
Directions

1Cut squash into cubes.

2Cook in salted water until firm and tender.

3Drain.

4Do not mash.

5Melt margarine and mix with stuffing mix.

6Mix remaining ingredients, folding in squash last. Put half of stuffing in bottom of casserole.

7Add squash mixture.

8Top with remaining stuffing.

9Cook in a 350° oven until bubbly, about 1/2 hour.
