- 1 lb. ground beef
- 1 c. raw rice
- 1 green pepper, chopped
- 1 onion, chopped
- 1/4 c. oil
- 1 can (No. 2 1/2) tomatoes
- 1 tsp. salt
- 1/4 tsp. basil
- 4 green or yellow squash (about 7 inches long), sliced
- grated cheese
- dash of paprika
Directions

1Brown beef, rice, green pepper and onion in oil in heavy skillet.

2Add tomatoes and seasonings.

3Place sliced squash in a casserole and top with meat mixture.

4Cover and bake at 350° for 30 minutes.

5Top with cheese and paprika.

6Bake another 15 to 20 minutes.

7Makes 4 to 6 servings.
