  • 1 c. shortening
  • 2 eggs
  • 2 c. pumpkin (small can)
  • 4 c. flour, sifted
  • 4 tsp. baking powder
  • 2 tsp. baking soda
  • 1 tsp. salt
  • 1 c. chopped nuts
  • 1 c. chopped dates or raisins (soak raisins in boiling water to soften, drain well)

    Mix sugar and shortening; beat.

    Add pumpkin. Mix well.

    Add dry ingredients gradually.

    Mixing well each time. Add nuts; mix.
