- 2 c. sugar
- 1 c. shortening
- 2 eggs
- 2 c. pumpkin (small can)
- 4 c. flour, sifted
- 4 tsp. baking powder
- 2 tsp. baking soda
- 1 tsp. salt
- 1 c. chopped nuts
- 1 c. chopped dates or raisins (soak raisins in boiling water to soften, drain well)
Directions

1Mix sugar and shortening; beat.

2Add eggs; beat.

3Add pumpkin. Mix well.

4Add dry ingredients gradually.

5Mixing well each time. Add nuts; mix.

6Add dates or raisins; mix well.

7Bake 8 to 10 minutes at 400°.

8Frost with powdered sugar or Betty Crocker icing.
