Squash Casserole

Ingredients

  • 2 lb. yellow squash (fresh or frozen)
  • 2 Tbsp. chopped pimento
  • 1 medium grated carrot
  • 1 small chopped onion
  • 1 can cream of chicken soup
  • 1/2 pt. sour cream
  • 3/4 pkg. herb seasoned croutons
  • 1 stick margarine

Directions

    Melt half of margarine in casserole dish.

    Mix in croutons on bottom of casserole dish.
  3. 3
    Cook squash and drain well.
  4. 4
    Mix all other ingredients.

    Season with salt and pepper to taste.

    Pour over croutons and sprinkle reserved crumbs on top.

    Bake at 350° for 20 to 30 minutes or until bubbly.

    Can be prepared ahead of time.

    Very good reheated (microwaved).

    Can also be frozen.
