Squash Casserole

  • 2 c. fresh or frozen squash
  • 1 large onion, chopped
  • 1 pkg. crumbled cheese crackers (I use Ritz)
  • 1/4 c. melted butter
  • 1 c. grated cheese
  • 2 eggs
  • 1/2 c. milk
  • salt and pepper to taste

Directions

    Cook squash and onion until tender; drain and mash. Beat together eggs and milk; add to squash. Mix cheese, oleo and cracker crumbs. Add 1/2 of this to casserole mixture. Put into buttered casserole and top with remaining crumb mixture. Bake at 400° for 20 to 30 minutes.
