Squash Casserole

  • 2 lb. fresh or frozen yellow squash
  • 1 small onion, chopped fine
  • 1/2 pt. sour cream
  • 18 saltine crackers
  • 1 c. grated Cheddar cheese
  • 1/2 stick margarine
  • salt
  • pepper

Directions

    Boil squash; salt and pepper to taste.

    Drain and mash squash; add onion, margarine, 12 saltine crackers (crumbled), 1/2 of the cheese and sour cream.

    Pour into casserole dish.

    Crumble remaining saltines and sprinkle on top.

    Cover with the remaining cheese and bake at 350° for 40 to 50 minutes.
