- approximately 2 lb. summer squash
- 1 large onion, finely chopped (saute tightly)
- 3 eggs, beaten
- 12 crackers, crumbled
- 1 scant c. mayonnaise
- 1 pkg. Hidden Valley Ranch dressing mix
- 1 c. grated extra sharp cheese, shredded
- buttered cornbread crumbs to cover the casserole
Directions

1Cut squash in 1/2-inch pieces and cook until just tender. Drain.

2Mix all ingredients except cornbread crumbs for top.

3Put in greased casserole dish and bake at 350° for 35 minutes approximately (ovens vary).
