Squash Casserole

Ingredients

  • approximately 2 lb. summer squash
  • 1 large onion, finely chopped (saute tightly)
  • 3 eggs, beaten
  • 12 crackers, crumbled
  • 1 scant c. mayonnaise
  • 1 pkg. Hidden Valley Ranch dressing mix
  • 1 c. grated extra sharp cheese, shredded
  • buttered cornbread crumbs to cover the casserole

Directions

    Cut squash in 1/2-inch pieces and cook until just tender. Drain.

    Mix all ingredients except cornbread crumbs for top.

    Put in greased casserole dish and bake at 350° for 35 minutes approximately (ovens vary).
