Squash Casserole

Ingredients

  • 3 c. cooked squash
  • 1 medium onion (cook)
  • 1 egg
  • 1 can cream of mushroom soup
  • 1 c. grated cheese
  • potato chips
  • 1/4 stick margarine
  • French fried onions
  • salt (season)
  • pepper (season)

Directions

    Cook squash and onion (drain some liquid).

    Season with salt, pepper and margarine.

    Mix squash with egg, cream of mushroom soup and grated cheese.

    Crush one layer of potato chips in bottom of casserole.

    Put mixture in casserole dish.

    Cover with foil until hot and bubbly at 350°.

    Take out of oven and place a layer of the French fried onions on top.

    Put back in oven to brown the onions.
