Squash Casserole

Ingredients

  • 2 c. cooked yellow squash
  • 1 can cream of chicken soup
  • 1 c. sour cream
  • 1 carrot, grated
  • 1 small onion, chopped
  • herb seasoned bread crumbs
  • 1/4 c. grated Cheddar cheese
  • 1 tsp. salt
  • 1/2 tsp. pepper

Directions

    Mash squash.

    Add soup, sour cream, carrot, onion, salt and pepper.

    Spray casserole dish with nonstick spray.

    Cover bottom with 1/2 the bread crumbs.

    Add squash mixture.

    Cover with rest of bread crumbs and dot with butter.

    Bake at 350° for 35 minutes. Remove from oven and sprinkle with cheese.

    Let stand 10 to 15 minutes before serving.
