- 2 lb. squash
- 1 large onion, grated
- 2 c. fine bread crumbs
- 2 eggs
- 2 tsp. salt
- 1 tsp. black pepper
Directions

1Cook squash until tender, then drain well; mash squash and add other ingredients.

2Add more bread crumbs if necessary to handle. Form into oblong croquettes and roll in corn meal.

3Fry in deep fat until brown.
