  • 2 c. thinly sliced squash
  • 1/2 c. sliced onions
  • 2 Tbsp. water
  • 2 beaten eggs
  • 5 1/3 oz. evaporated milk
  • 2 c. cooked rice
  • 1/4 tsp. salt
  • 1 c. Monterey Jack cheese
  • chopped tomato
  • chopped green onion

Directions

    Microwave in covered dish squash, onions and water on High for 4 minutes.

    Drain and chop.
