Ingredients

  • 2 to 3 c. yellow squash, cubed (crookneck variety)
  • 1 small onion, diced
  • 2 c. crumbled corn bread
  • 2 Tbsp. butter or margarine, melted
  • 1 (10 3/4 oz.) can cream of chicken soup, undiluted
  • 1 tsp. poultry seasoning (marjoram, thyme and sage)
  • salt to taste
  • pepper to taste

Directions

    Cook squash and onion in enough water for simmering, about 1 1/2 cups until tender.

    Drain, reserving 1 cup liquid.

    Mix all ingredients lightly; place in 2-quart buttered casserole dish. Bake at 350° for 30 minutes or until light golden brown.

    Yields 6 to 8 servings.
