Squash Patties

Ingredients

  • 6 to 8 small squash (yellow or zucchini)
  • 1 grated onion
  • 1 1/2 Tbsp. salt
  • 1 c. self-rising flour
  • 1/2 c. cornmeal
  • 1 beaten egg
  • 1 c. grated cheese (Jack or Cheddar)
  • 1 lb. cooked, drained and crumbled bacon (optional)

Directions

    Sprinkle salt on squash and onion, place in colander.

    Let drain until moisture is gone.

    Add cornmeal, flour, egg and cheese (and bacon).

    Make into patties.
