Squash Pickles

Ingredients

  • 6 c. squash, sliced
  • 3 c. sugar
  • 2 c. vinegar
  • 1 tsp. mustard seed
  • 2 tsp. celery seed
  • 2 c. bell pepper
  • 2 c. pimento pepper (I use diced pimento from the jar, use 1 or 2 jars per batch for color)
  • onion (if desired)

Directions

    Soak squash in salt water 1 hour.

    Drain and rinse well.
  3. 3
    Mix with other ingredients and boil 15 minutes.
  4. 4
    Put in jars and seal. This is great with peas!
