- 3/4 lb. yellow squash
- 2 Egg Beaters or your choice egg substitute
- 1/3 c. flour
- 1/3 c. cornmeal
- 1 tsp. baking powder
- 1/2 onion, diced
- cooking oil spray
Directions

1Boil squash, drain and mash.

2Should have approximately 1 cup of squash.

3Combine squash with Egg Beaters and mix well.

4Combine flour, corn meal and baking powder.

5Mix well.
-
6Add to squash mixture with onion and season with salt substitute of your choice. Drop into lightly oiled pan.

7Cook until golden brown, turning once.

8Drain.

9Yields 2 dozen.
