Ingredients

  • 10 c. yellow summer squash, chopped
  • 5 c. chopped onions
  • 1 green pepper, chopped
  • 1 red pepper, chopped
  • 5 Tbsp. pickling salt
  • 2 tsp. celery seed
  • 5 c. sugar
  • 2 tsp. powdered dry mustard
  • 1 tsp. turmeric
  • 1/2 tsp. black pepper
  • 1 tsp. cornstarch
  • 2 1/2 c. white vinegar

Directions

    Combine squash, onions and peppers.

    Add pickling salt and let set for 1 hour; drain good.

    Mix remaining ingredients.

    Mix with squash mixture and heat.

    Put into jars.

    Cook 15 minutes in hot water bath.
