Ingredients
- 2 Tbsp. vegetable oil or peanut oil
- 1 clove garlic, minced
- 1 large onion, sliced and separated into rings
- 3 medium zucchini, thinly sliced
- 3 medium size yellow squash, thinly sliced
- 3 tomatoes, cut into wedges (optional)
- 3/4 tsp. salt
- 1/2 tsp. pepper
- 1 c. shredded American cheese
Directions

1Pour oil into iron frying pan or hot wok, coating sides until bottom is covered with oil.

2Add garlic and onion; stir-fry 1 minute.

3Stir in zucchini and yellow squash.

4Cook 2 to 3 minutes or until crisp-tender.

5Add tomatoes (optional), salt and pepper. Stir well.

6Sprinkle cheese over vegetables, stirring just until cheese melts.

7Yields about 6 servings.
