  • 4 Persian cucumbers, chopped
  • 1/4 cup Sriracha
  • 2 teaspoons freshly squeezed lemon juice
  • 1 tablespoon minced lemon zest
  • 12 mint leaves, minced
  • Salt and freshly ground black pepper
