Ingredients

  • 2 Tablespoons Butter
  • 3 ears White Corn, Cut Off Cob
  • 1/4 pieces Red Onion, Diced
  • 2 whole Lemon Cucumbers Sliced
  • 3 ounces, weight Goat Cheese
  • 2 whole Red Tomatoes Sliced
  • 2 whole Yellow Tomatoes Sliced
  • 4 Tablespoons Italian Dressing

Directions

    In medium sauce pan add butter, corn and red onion. Saute till corn and onion are tender. Remove from heat and cool.

    Start stacking veggies:

    Put a cucumber down, add a thin layer of goat cheese.

    Then a red tomato and thin layer of goat cheese.

    Then a cucumber and thin layer of goat cheese.

    Then yellow tomato and thin layer of goat cheese.

    Repeat layers till about 4 inches tall.

    Top each with corn and red onion mixture

    Drizzle each with a tablespoon of Italian dressing.
