Ingredients
- 2 Tablespoons Butter
- 3 ears White Corn, Cut Off Cob
- 1/4 pieces Red Onion, Diced
- 2 whole Lemon Cucumbers Sliced
- 3 ounces, weight Goat Cheese
- 2 whole Red Tomatoes Sliced
- 2 whole Yellow Tomatoes Sliced
- 4 Tablespoons Italian Dressing
Directions

1In medium sauce pan add butter, corn and red onion. Saute till corn and onion are tender. Remove from heat and cool.

2Start stacking veggies:

3Put a cucumber down, add a thin layer of goat cheese.

4Then a red tomato and thin layer of goat cheese.

5Then a cucumber and thin layer of goat cheese.

6Then yellow tomato and thin layer of goat cheese.

7Repeat layers till about 4 inches tall.

8Top each with corn and red onion mixture

9Drizzle each with a tablespoon of Italian dressing.
