Ingredients: 2 1/2 c. flour; 1 tsp. baking powder; 1/2 tsp. salt; 2/3 c. shortening; 1 1/3 c. granulated sugar; 3 eggs; 3/4 c. milk; 1 tsp. lemon extract; confectioners sugar (optional)

1/2 tsp. salt
2/3 c. shortening
1 1/3 c. granulated sugar
3 eggs
3/4 c. milk
1 tsp. lemon extract
confectioners sugar (optional)

Directions

Heat oven to 350°. Grease and flour pan. Sift flour, baking powder and salt. Beat shortening, sugar and eggs together until light and fluffy.

Add flour mixture alternately with milk and lemon extract.

Start with flour and end with flour. Bake 1 hour and 20 minutes for loaf pan. Sprinkle with confectioners sugar. Cut thin for serving.
