- 2 top sirloin steaks (1/2-inch thick)
- salt
- 2 Tbsp. butter (1/4 stick)
- 2 small shallots, minced
- 1/4 c. dry sherry
- 2 tsp. brandy, slightly warmed
Directions

1On cutting board, pound steaks until about 1/4-inch thick. Sprinkle lightly with salt.

2In 10-inch skillet over medium-high heat, in hot butter, cook steaks until browned, turning steaks once.

3Stir in shallots and cook, stirring until tender.

4Add sherry and heat.

5Pour brandy over steaks.

6With a match, set aflame; turn steaks once or twice until flaming stops.

7Serve immediately.
