Stewed Hard Crabs

  • 2 doz. hard crabs, backed and cleaned
  • 6 to 8 medium white potatoes, diced or cubed
  • 1 large onion, diced
  • salt and pepper to taste
  • 6 to 8 thin slices salt fatback, fried out, or 2 Tbsp. oil, if desired
  • Corn Meal Dumplings

Directions

    Place crabs in a large pot.

    Add potatoes, onion, salt and pepper, grease from fatback or oil and water.
  3. 3
    Cook over medium heat for approximately 15 minutes or until full boil begins.
