  • 2 pounds ripe tomatoes, stems removed and peeled
  • 2 tablespoons butter
  • 2 celery stalks, sliced
  • 1 small green pepper, seeded and diced
  • 2 scallions, finely chopped
  • salt and pepper
  • 1 teaspoon sugar
  • 2 tablespoons, chopped, fresh basil

Directions

    Cut the peeled tomatoes into wedges

    Heat butter in pan. Add celery, green pepper and scallions and cook until softened, about 5 minutes.

    Stir in the tomatoes. Cover and cook until the tomatoes are soft but not mushy. Add salt, pepper and sugar.

    Remove the pan from the heat and add the chopped basil.
