- 1 1/2 lb. meat (about 1/4 inch thick)
- 2 Tbsp. soy sauce
- 1 Tbsp. oil
- 2 tsp. sugar (Equal may be used)
- 2 tsp. cornstarch
- 1/2 tsp. hot pepper sauce
- 2 medium size celery stalks
- 1 large carrot
- 1 green pepper
- 2 Tbsp. salad oil
Directions

1Cut meat into small strips.

2In bowl, toss meat with the soy sauce, oil, sugar, cornstarch and hot pepper sauce.

3Cut celery, carrot and green pepper into matchstick thin strips.

4In a 12-inch skillet over high heat in very hot oil, cook vegetables, stirring frequently until tender-crisp.

5Remove vegetables to a bowl.

6In drippings in skillet, cook the meat, stirring quickly and constantly.

7Return vegetables and mix well.

8Serve over rice.
