- 2 c. plain stone ground cornmeal
- 2 c. buttermilk
- 4 Tbsp. peanut or vegetable oil
- 1 tsp. salt
- 1 tsp. sugar
- 1 tsp. baking powder
- 1 tsp. soda
Directions

1Pour oil into cast-iron skillet.

2Heat to the smoking point in 400° oven.

3Meanwhile, combine cornmeal and other dry ingredients. Blend thoroughly.

4When oil is hot, add buttermilk to dry ingredients and mix with stiff whisk.

5Carefully remove skillet from oven and pour hot oil into batter, mixing with whisk while pouring.

6Pour batter into skillet and return to oven.

7Bake at 400° for 30 minutes or until golden brown.

8Remove and let rest for 10 to 15 minutes.
