Strawberry Nut Bread

- 3 c. all-purpose unbleached white flour
- 1 tsp. baking soda
- 1/2 tsp. salt
- 3 tsp. cinnamon
- 2 c. sugar
- 2 c. sliced fresh strawberries
- 4 eggs
- 1 1/4 c. oil
- 1 c. chopped nuts
Directions

1Sift together the dry ingredients into a large mixing bowl. Make a well in the center.

2Beat together the strawberries, eggs and oil and pour into the well.

3Stir together just enough to dampen all ingredients.

4Quickly stir in the nuts.

5Pour into 2 or 3 well-greased bread pans, filling no more than half full.

6Bake in a preheated 350° oven 45 to 60 minutes or until the bread is baked through and a toothpick inserted near the center comes out clean.

7Cool 20 to 30 minutes before removing from pans.

8Finish cooling on a rack.

9Do not slice until the bread is completely cold.
