Stuffed Acorn Squash

  • 2 small or 1 medium size acorn squash
  • 1/2 tsp. salt
  • 2 eggs
  • 1 Tbsp. grated onion
  • 1 c. grated Cheddar cheese
  • 2 Tbsp. fine bread crumbs
  • salt and pepper to taste
  • butter

Directions

    Boil whole squash in salted water until almost tender.

    Remove tops to make cavities for stuffing.

    Scoop out stringy insides and discard.

    Drain water that collects.

    Beat eggs until frothy.

    Add grated onion, cheese, bread crumbs, salt and pepper.
