- 1/2 tsp. salt
- 2 eggs
- 1 Tbsp. grated onion
- 1 c. grated Cheddar cheese
- 2 Tbsp. fine bread crumbs
- salt and pepper to taste

Directions

1Boil whole squash in salted water until almost tender.

2Remove tops to make cavities for stuffing.

3Scoop out stringy insides and discard.

4Drain water that collects.

5Beat eggs until frothy.

6Add grated onion, cheese, bread crumbs, salt and pepper.
