Stuffed Artichokes

  • 2 artichokes
  • 5 c. plain bread crumbs
  • 2 c. Romano cheese, grated
  • 1 c. water
  • 1 large onion, chopped
  • 5 cloves garlic, minced
  • 1 c. oil
  • salt and pepper to taste

Directions

    Wash and drain artichokes.

    Rap artichokes (top) against countertop to open leaves.

    Mix cheese, onions, garlic and bread crumbs.

    Season to taste. Mix well. Stuff between leaves.

    Place in a heavy gauge pot.

    Add 1 cup water.

    Pour oil over artichokes. Place in water.

    Cook, covered, until one leaf can be pulled off. Serve hot.
