Stuffed Baked Potatoes

Ingredients

  • 4 to 6 large baking potatoes
  • 1 lb. ground chuck
  • 1 lb. Velveeta cheese, cubed
  • 1 can Ro-Tel tomatoes with green chilies, diced
  • 1 pkg. taco seasoning mix
  • 1/2 to 1 c. green onions, finely chopped
  • 8 oz. sour cream
  • salt and pepper

Directions

    Grease potatoes and bake for 1 1/2 hours at 350° or until done.

    Brown hamburger meat and mix with taco seasoning mix according to package directions.

    (Be sure meat is drained.)

    In a double boiler or microwave, melt Velveeta cheese mixed with Ro-Tel tomatoes.

    Stir frequently.

    To serve, slice hot potato and lightly fluff.

    Layer taco meat, cheese mixture, sour cream, green onions and salt and pepper to taste.
