- 1 (6 oz.) pkg. long grain and wild rice mix
- 1/2 c. chopped celery
- 1 (5 oz.) can chopped water chestnuts, chopped
- 1 (3 oz.) can chopped mushrooms, drained
- 1/4 c. melted butter or margarine
- 1 Tbsp. soy sauce
- 5 to 6 (1 to 1 1/2 lb.) Cornish hens
- salt
- additional melted butter or margarine
Directions

1Cook rice according to package directions.

2Add remaining ingredients except hens and additional melted butter.

3Sprinkle cavity of each hen with salt.

4Stuff rice mixture into cavities of hens.

5Loosely cover with foil and bake at 375° for 30 minutes. Uncover and continue to bake for 1 hour, basting occasionally with butter.

6Yields 6 servings.
