Stuffed Cornish Hens

Ingredients

  • 1 (6 oz.) pkg. long grain and wild rice mix
  • 1/2 c. chopped celery
  • 1 (5 oz.) can chopped water chestnuts, chopped
  • 1 (3 oz.) can chopped mushrooms, drained
  • 1/4 c. melted butter or margarine
  • 1 Tbsp. soy sauce
  • 5 to 6 (1 to 1 1/2 lb.) Cornish hens
  • salt
  • additional melted butter or margarine

Directions

    Cook rice according to package directions.

    Add remaining ingredients except hens and additional melted butter.

    Sprinkle cavity of each hen with salt.

    Stuff rice mixture into cavities of hens.

    Loosely cover with foil and bake at 375° for 30 minutes. Uncover and continue to bake for 1 hour, basting occasionally with butter.
