Ingredients
- 1 lb. haddock fillets
- 2 c. cooked rice
- 1 c. grated cheese
- 1 c. boiling water
- 2 chicken bouillon cubes
- 1/3 c. margarine
- 1/3 c. lemon juice
- 1 tsp. hot sauce
- 1 pkg. broccoli (optional)
Directions

1Cook rice.

2Mix in Cheddar cheese and broccoli (optional) while rice is still hot.

3Dissolve bouillon cubes in water.

4Add other ingredients until mixed.

5Add 1/2 of sauce to rice and cheese mixture.

6Place 1/3 cup rice mixture on the fillets; roll up.

7Put remaining rice and cheese mixture on the bottom of a 9 x 9-inch pan.

8Place stuffed haddock on top.

9Bake at 375° for 25 minutes.

10Serve with remaining lemon and butter sauce on the side.
