Stuffed Mushrooms

Ingredients
- 1 lb. medium to large mushrooms
- 2 Tbsp. margarine
- 1 clove garlic, chopped fine
- 2 Tbsp. chopped onion
- 1/2 c. dry bread crumbs
- 3 Tbsp. grated Parmesan cheese
- 1 Tbsp. olive oil
- 1 Tbsp. parsley
- pinch of oregano
- salt and pepper to taste
Directions

1Remove stems from mushrooms.

2Chop stems fine.

3In a skillet heat the margarine; saute the garlic and onion until onion is tender.

4Add the mushroom stems; cook over low heat.

5Raise heat; cook until liquid has evaporated.

6In a bowl combine the cooked stems with bread crumbs and all other ingredients.

7Season with salt and pepper.

8Stuff mushrooms with this mixture.

9Arrange caps on a baking sheet.

10Brush tops with olive oil.

11Bake at 350° for 20 to 25 minutes.

12Mushrooms can be stuffed and refrigerated up to one day ahead.
