Stuffed Mushrooms

Ingredients

  • 1 lb. medium to large mushrooms
  • 2 Tbsp. margarine
  • 1 clove garlic, chopped fine
  • 2 Tbsp. chopped onion
  • 1/2 c. dry bread crumbs
  • 3 Tbsp. grated Parmesan cheese
  • 1 Tbsp. olive oil
  • 1 Tbsp. parsley
  • pinch of oregano
  • salt and pepper to taste

Directions

    Remove stems from mushrooms.

    Chop stems fine.

    In a skillet heat the margarine; saute the garlic and onion until onion is tender.

    Add the mushroom stems; cook over low heat.

    Raise heat; cook until liquid has evaporated.

    In a bowl combine the cooked stems with bread crumbs and all other ingredients.

    Season with salt and pepper.

    Stuff mushrooms with this mixture.

    Arrange caps on a baking sheet.

    Brush tops with olive oil.

    Bake at 350° for 20 to 25 minutes.

    Mushrooms can be stuffed and refrigerated up to one day ahead.
