- 4 whole Red, Green, Yellow Or Orange Peppers
- 1 cup Dry Couscous, Cooked According To Package Directions
- 1 can (15 1/2 Oz. Size) Black Beans, Drained And Rinsed
- 1 can (14 1/2 Oz. Size) Diced Tomatoes, Undrained
- 2 Tablespoons Green Onions, Chopped
- 1/2 teaspoons Salt
- 1/2 teaspoons Black Pepper
- 1/2 cups Cheese, Shredded
Directions

1Preheat oven to 400 F.

2Wash the peppers, cut off the top and hollow out the inside.

3Set them aside.

4Cook couscous according to package directions.

5In a bowl combine cooked couscous with beans, tomatoes, onions, salt, pepper and cheese.

6Spoon mixture into peppers.

7Place peppers in a casserole dish, making sure they sit upright and cover the dish with a sheet of foil.

8Bake for 45 minutes or until peppers are soft when pierced with a fork.

9Makes 4 servings.
