- 3 medium zucchini squash
- 1 lb. Italian sausage
- 1/2 c. seasoned bread crumbs
- 1 egg, beaten
- grated Parmesan cheese
Directions

1Wash zucchini and cut in half lengthwise.

2Place in boiling salted water and boil until tender.

3Remove from water and scrape out pulp.

4Drain well.

5Remove sausage from casing and fry until no longer pink.

6Combine pulp, sausage, bread crumbs and beaten egg.

7Mix gently.

8Fill squash lengths with mixture and sprinkle with grated Parmesan cheese.

9Place in a lightly oiled baking pan. Bake at 375° for 20 to 30 minutes.
