- 3 medium zucchini
- 1 Tbsp. butter
- 4 slices cheese, diced
- 1/2 c. water chestnuts, sliced
- 3 Tbsp. dry bread crumbs
- 3 Tbsp. chopped onions
- 1/2 tsp. garlic salt
- 1/4 c. chopped tomato
Directions

1Parboil zucchini 5 to 8 minutes.

2Drain and cut in half lengthways.

3Hollow out, leaving 1/4-inch shell.

4Chop centers. Melt butter, then combine cheese, chestnuts, bread crumbs, garlic, tomato and zucchini centers.

5Cook filling until cheese starts to melt.

6Fill hollow zucchini.

7Bake in 350° oven for 25 to 30 minutes.
