Stuffed Zucchini

  • 6 medium zucchini
  • 1 lb. ground beef, browned
  • 1/4 c. Worcestershire sauce
  • 16 oz. Italian style canned tomatoes
  • 1 c. bread cubes
  • Prudhommes Cajun seasoning for vegetables
  • 1/4 c. onion
  • 1/2 c. Mozzarella cheese
  • 1/4 c. Parmesan cheese

Directions

    Slice zucchini in half lengthwise and scoop out pulp; save. Puree pulp and tomatoes in food processor.

    Brown ground beef in skillet.

    Add onion, Worcestershire sauce, tomatoes and pulp. Season with Prudhommes Cajun seasoning, about 1 1/2 teaspoons or to taste.

    Stir in bread cubes.

    Remove from heat.
