Stuffing Spinach Balls

Ingredients

  • 2 pkgs frozen spinach, cooked, well-drained, and chopped
  • 1 med. onion, chopped fine
  • 2 c. seasoned stuffing
  • 3/4 c. margarine, softened
  • 1/2 c. grated sharp cheddar cheese
  • 4 eggs, beaten
  • 1/2 tsp. salt
  • 1/2 tsp. pepper
  • 1/2 tsp. thyme

Directions

    Cook onion with spinach.

    Drain well.

    Chop spinach.

    Combine all ingredients.

    Chill several hours.

    Roll into balls.

    Place on cookie sheet.

    Bake 10 -15 minutes at 350° or until golden brown. Or roll into ball and freeze, or bake balls and freeze.

    Makes 50 balls.

    Do not thaw to bake or heat.
