Ingredients

  • 1 c. flour
  • 1/2 c. quick oats
  • 1 1/2 tsp. baking powder
  • 1 tsp. cinnamon
  • 1/4 tsp. allspice
  • 1/4 tsp. nutmeg
  • 1/2 tsp. cloves
  • 1/2 c. Nutri-Grain cereal, crushed
  • 2 large eggs
  • 3/4 c. honey
  • 1/2 c. margarine
  • 1 1/2 tsp. vanilla
  • 1 c. cubed apples
  • 3/4 c. raisins, coated with flour
  • 1/2 c. sugar-free jelly or preserves
  • 1/2 c. walnuts, crushed
  • 1 c. pecans, crushed
  • 3/4 c. chopped cranberries, sweetened with artificial sweetener

Directions

    Mix the first 8 ingredients.

    Mix remainder and add to first bowl.

    Line bottom of baking dish with pecans.

    (Also put some on top.)

    Bake in 2 greased 1 1/2-quart loaf pans for 35 to 45 minutes at 350°.

    Best if sealed and refrigerated for 2 days.
