  • 1 large onion, thinly sliced and rings separated
  • 2 Tbsp. cooking oil
  • 1 to 2 lb. steak, cut into thin strips
  • 1 can mushroom bits and pieces, drained
  • 1 can bean sprouts or Chinese vegetables, well drained
  • 1 can bamboo shoots
  • 1 pkg. frozen of 1 bunch fresh spinach, chopped
  • 1 green bell pepper
  • 1 Tbsp. sugar
  • 1/3 c. soy sauce
  • 1/2 c. water

    Saute onion in hot oil.

    Add beef.

    Saute 2 to 3 minutes.

    Add celery, mushrooms, bamboo shoots, sugar, soy sauce and water.

    Stir to mix well.

    Cover; simmer about 10 minutes.

    Arrange spinach on top of meat and vegetables.

    Cover, simmer for 5 minutes or until spinach wilts and veggies are crisp tender.

    Serve with hot seasoned rice.
