Ingredients

  • 3 cup cooked chicken, chopped
  • 2 ear corn on the cob, cooked and kernels removed, or 1 cup frozen or canned
  • 3/4 cup black beans
  • 1 red pepper, chopped
  • 1/2 red onion, chopped
  • 1/4 cup cilantro, chopped
  • 1/2 cup ranch dressing or mayonnaise
  • 1/2 bbq sauce
  • 1 lime
  • 1 salt and pepper to taste
  • 1 avocado, tomato, jalapenos, tortilla chips optional

Directions

    Add chicken, corn, beans, red pepper, onion and cilantro to a large bowl

    In a separate bowl, mix ranch and bbq sauce

    Add sauce to chopped chicken and vegetables, mix

    Squeeze lime juice over, mix

    Salt and pepper to taste

    Optional ingredients: chopped avocado, tomato or jalapenos

    Optional: Serve in avocado halves, hollowed out tomatoes or with tortilla chips
