Summer Corn Salad

Ingredients

  • 1 large bag frozen corn
  • 1 medium onion, chopped
  • 1/2 small green pepper, chopped
  • 1/2 small red pepper, chopped
  • 1 medium stalk celery, chopped
  • 1 medium carrot, grated
  • 1/2 small can relish or chow-chow
  • 1 medium cucumber, diced
  • 1 large tomato, diced
  • radishes (optional)
  • 1/2 c. sugar
  • 3/4 c. white vinegar
  • salt and pepper

Directions

    Run hot water over frozen corn to thaw. Drain well. Add all finely chopped vegetables to corn, mix well.

    Add sugar, vinegar, salt, pepper and celery seed.

    Mix to taste. Serve very cold. Yields 8 to 10 servings.

    Great with spaghetti.
